These Roasted Vegetables are good with everything, it really isn’t and exaggeration. They come together quickly and they can be a side dish or the star of the meal. They are great stirred into risotto or for breakfast with eggs. We have even eaten them topped with guacamole and salsa for a quick and delicious dinner. The possibilities are endless.
You can’t beat coming home on a cold winters’ day and being enveloped by the smell of rosemary and pork. This recipe is really fast and the house smell delicious when something has been braising all day. All the better if there is almost no work involved, especially on those exceptionally long days when you just want to get home and relax.
There is something about the crisp apples, sweet cranberries, and tangy feta cheese that make this salad a favorite of mine. A balsamic dressing doesn’t hurt either. Balsamic Vinegar is probably my favorite vinegar, you just can’t beat that slightly sweet tangy-ness combined with such depth of flavor.
