Banana Pancakes

Banana Pancakes

Makin’ Banana Pancakes on the weekend or pretend that it’s the weekend, yeah These are great for a lazy weekend morning as well easing the Monday morning blues. I’m not much of a breakfast person during the week but sometimes a little something out of the ordinary in the form of pancakes and espresso is definitely in order.

Apple Cheddar Salad

Apple Cheddar Salad

Cheddar and apples is a tough combination to beat. It was always my favorite childhood snack. These days I prefer my cheddar and apples over a bowl of greens with creamy dressing and freshly ground black pepper.

Roasted Vegetables

Roasted Vegetables

These Roasted Vegetables are good with everything, it really isn’t and exaggeration. They come together quickly and they can be a side dish or the star of the meal. They are great stirred into risotto or for breakfast with eggs. We have even eaten them topped with guacamole and salsa for a quick and delicious dinner. The possibilities are endless.

Butternut Risotto

Butternut Risotto

This Butternut Risotto is an all vegetable dish, no rice, prepared “risotto style”. Don’t worry we will do traditional risotto another time. We usually enjoy this risotto as a vegetarian dinner with a salad. We have also served it as a side dish, (side note: butternut squash pairs well with steak).

Mexican Sweet Potato Skins

Mexican Sweet Potato Skins

These Mexican Sweet Potato Skins are just so delicious, not to mention pretty healthy as well. There is just a little cheese on top and the rest of dinner is vegetables. When you are eating these, you are not thinking healthy, you’re just thinking cheesy mexican goodness.

Raspberry Rolls with Lemon Cream Cheese Frosting

Raspberry Rolls

It’s Tyler’s birthday this week and Raspberry Rolls are his choice for breakfast. Raspberry anything is a favorite around here, especially in the winter. The berries freeze so well and taste like summer in January.
