We were lucky to have perfect weather in Astoria, a beautiful coastal town at the very top of Oregon. Astoria sits right on the water and the views are just amazing.
These Lettuce Wraps are wonderful, I could go on and on. Suffice it to say, I’m hooked and we’ll be eating these often. I have a longstanding addiction to all things satay chicken. When we’re in Calgary we love to get Vietnamese subs in Chinatown and we always get satay chicken. I have been longing for one since November. Now I can have some of the same flavors at home with the addition of a lot more vegetables.
Today I just couldn’t resist posting a few photos of Spring. Even though they don’t qualify as an adventure, I wanted to share my Spring excitement with you. Be sure to check back on Friday for the usual weekly adventure.
A little while ago we made coconut sugar scrub which is the best for soft skin all year round. Sugar scrub isn’t suitable for your face, so what are we to do? Well, that is where Pineapple Facial comes in. My sister discovered this trick a little while back and the results I’ve gotten have been fabulous. This is the quickest facial treatment I’ve ever tried with the most dramatic results. Normally, a facial takes a good 45 minutes between the scrub, mask, steam, toner, and finally moisturizing.
This Pineapple Crisp is a little different than a usual crisp, it’s not baked. It is just fresh fruit, a macadamia nut topping, and coconut lime whipped cream. What does that mean for you? It means that in 20 minutes you can have a great dessert that is healthy enough to eat for breakfast.
It was a phenomenal day in the mountains just west of Calgary in a town called Canmore. Canmore is situated in a corridor created by two mountain ranges running along either side. Overlooking the town are two peaks that are connected by a ridge, Ha Ling Peak and Miners’ Peak. If you get started in the morning it is pretty easy to do both in a day.
The sun is shining and I’m eating raspberry ice cream in the late afternoon, this day just couldn’t be better. This recipe evolved almost on it’s own. I opened the fridge and there was the Raspberry Sauce I had just made sitting next to the cream. What could I do? I just had to make ice cream, no two ways about it.
We went out for dinner last night at Pescado Blanco, Mountain Mexican Cuisine in Whitefish, Montana. If you ever come to ski Whitefish Mountain Resort (Big Mountain), you should check it out. I almost always get the fish special, (pictured above) because they are just so good. Tyler’s favorite is the Super Burrito. One time we got one for take-out and it weighed in at 4 pounds!
I was a latecomer to the green smoothie world. Every time I would see a recipe I couldn’t help but think: how could that be good? I finally took the plunge and put some fruit and greens in the blender. In full disclosure, there have been a few combinations that were not to be repeated. However perseverance pays off because this one is really good.
