This is one of Tyler’s all-time favorite dinners. It has been a popular choice in the past, but we haven’t been eating it since we started trying to eat healthier. I thought is was more that time to come up with a healthier version that still has all the requisite crisp-cheesy-goodness. The good news is, the new recipe has the ‘Tyler Stamp of Approval’ which is probably the highest praise I could get.

This recipe is so fast and easy that I find myself making it every week because it makes the perfect grab and go. It also provides a healthier choice for any mid-day cravings that might appear. I’m not much for breakfast first thing in the morning, and that’s why I’ve been working on some recipes for on the go snacking around 10:00 a.m.
As we headed south toward Newport we said goodbye to the last of the sun rays. In the morning, we were lucky enough to catch a bit of sun for our walk on the beach. Even though our Newport days were foggy, it was definitely our favorite coastal town in Oregon. This is my version of the popular Chinese take-out, Sesame Chicken. I’ve lightened up the recipe considerably by not coating and deep frying the chicken. Omitting a step also shortens the preparation time by a lot, as well making this a quick, easy, and healthy weeknight dinner.
