I’ve been on a bit of a roll recreating favorite recipes from my childhood lately. We’re kicking it all off with these lemon bars because anyone I’ve ever known has a fond memory of lemon bars. They were always a dessert I looked forward too, even to the point I would beg for them.
Can you ever get enough of Pad Thai? I’m thinking not, as it hasn’t happened to me yet! Today’s version of Pad Thai is far from the classic, but stick with me because Pad Thai is delicious in all it’s forms.
Meal prepping has been so helpful to both of us for eating healthier on a regular basis. But meal prepping snacks has been just as important if not even more so. Having a healthy option around to grab when you’re running out the door in a hurry is beyond helpful.
Slowly but surely I’ve been recreating spiralized versions of some of my favorite take-out dishes. When we left off at the end of Day 10, we had just made it out of the east side of Dettifoss waterfall, and finally found a place to sleep for a few hours. Bright and early the next day we were out of bed and time lapsing from a spot near the west side of Dettifoss.
