It’s no secret I love to cook. I’m the type of person who relaxes after a long day by spending time in the kitchen, I just find it ultimately soothing. However having said all that, there’s days where cooking dinner is just one more thing to cross off the list that’s adding stress to an over packed day.
When we last left off on Day 5, we’d had a fairly restful day in comparison to our first 4 action packed days. However that was definitely short lived because Day 6 started off at the absolute crack of dawn, 2 am to be precise.
One of my 10 Intentional Habits for the New Year is to eat more veggies. There’s always so much confusing diet advice being thrown around, and it’s even worse at the beginning of a new year. We’ve been making this pudding for years, and it never ceases to please whenever I make it for company. It’s easy to throw together in the food processor, and it can be made ahead as well for the ultimate convenience.
When we last left off, we were making Thai Curry in the camping area at Skogafoss waterfall. We’d been going non-stop for 4 days with only 7 hours of sleep, (total) and it’s safe to say we were exhausted. Luckily when we looked up the weather forecast for the next day over dinner, they were predicting rain.
