I’ve heard these apple slice snacks called ‘apple doughnuts’, but in my opinion, that’s taking things a little too far. Normally I have no problem with healthier versions, but just because these are doughnut-shaped, doesn’t mean I can bring myself to use the term doughnut!

So I went with apple slice snacks, after all that’s what they actually are. But in any case, no matter what you call them, they’re delicious. The 3 ‘recipes’ I have for you today are so easy to make, they can barely be called recipes. I like to keep my snacks super simple, so no extra fancy stuff here!

The first one pictured here is a sweeter combo with the nut butter of your choice, along with granola. I like to keep my Maple Cinnamon Granola on hand in the pantry as often as possible. That way we’re always just a couple minutes away from a snack. To jazz things up a bit, I added a little crushed freeze dried berries over the top.

Freeze-dried berries can be expensive, but a little goes a long way. And we love adding them here and there to different recipes. Raspberries are my favorite on these apple slice snacks because they pack the biggest punch of flavor.

The next apple slice snack is simply sliced apples topped with chicken salad. Obviously, this works best if you already have something similar already made. Nobody wants to make a chicken salad just for apple slice snacks unless maybe you’re throwing a party/shower.

But this one works well for us because I often make some type of chicken salad as part of our weekly meal prep. It’s great for quick and easy lunches on a bed of greens or for these apple snacks.

If you don’t have chicken salad just hanging out in your refrigerator, then this next one is for you! This apple snack is the easiest being just meat and cheese. Our favorite combo so far is ham, aged cheddar, and a thin smear of Dijon mustard. But you can use any combination of meat and cheese you like and have on hand.

If you have an apple corer, that would be perfect here. I don’t have one myself, but I do have a set of circular rings I use for all sorts of things, and they also work as cookie cutters too! I bought my set at a restaurant supply store, and the smallest ring is about 1/4″ across spanning all the way up to the biggest at around 5″.

By the time I finished recipe testing and photographing these, I had a ton of leftovers, (naturally!). So I definitely know that while these might be a snack, but you can easily make a meal out of them as well! In fact, the chicken salad and ham and cheese made up my lunches for days.

Ingredients

Nut Butter Granola Apple Slices:

31/2” slices from your favorite apple, cored, see notes

1 Tablespoon nut butter of choice, I like to use almond and cashew butter

12 Tablespoons granola, I used my Maple Cinnamon Granola

1 Teaspoon crushed freeze dried raspberries

Chicken Salad Apple Slices:

31/2” slices apple, core removed

1/41/3 cup Chicken Salad, see notes

1 Teaspoon sliced green onions, optional as a garnish

Ham and Cheese Apple Slices:

31/2” slices apple, cored

1/41/2 Teaspoon Dijon Mustard

1 slice of ham, cut into 3rds

3 small slices aged cheddar cheese


Instructions

To make the nut butter apple slices, spread the nut butter of your choice evenly over the 3 slices. Sprinkle the granola and freeze dried raspberries over the top.

To make the chicken salad apple slices, top each slice evenly with chicken salad and sprinkle with green onions if desired.

To make the ham cheese apple slices, smear a touch of Dijon mustard on each apple slice, (or add as much as you’d like). Then top each one with the ham and cheese slices.

Serve any of these apple slices snacks immediately. They do keep for several hours in the fridge, but the apples do brown a bit.

Notes

I used Pink Lady apples in this recipe, but I also love to use Honeycrisp and Granny Smith sometimes for it’s tartness.

I made my Healthier Chicken Salad with homemade mayo instead of avocado because I didn’t have any on hand. You can make this either way, or to spice it up, try my Curried Chicken Salad instead.

I wrote each of these recipes as 1 snack of 3 apples slices for one person. But feel free to make as little or as many as you’d like. I measured these just for recipe purposes, but you can also just wing it as these barely qualify as recipes!

    • Thank you, and I sure hope you enjoy them! I left my favorite apple recommendations in the notes of the recipe, usually I lean towards Honeycrisp first then either Pink Lady or even Granny Smith!
