We don’t tend to make very many recipes over and over again because I’m always recipe testing new things. But this Guacamole Salad has been a staple on our menu for about 5 years now. I’m not sure why it’s never occurred to me to write it down before, but here it finally is.
I’m a huge lettuce wrap fan, especially in the summer. I tend to crave lighter meals, with lots of fresh produce, and of course packed with flavor. However, that being said, sometimes I like to ‘bulk up’ my ‘light’ meals. So if you’re feeling extra hungry, try adding cooked vermicelli rice noodles into your lettuce wraps as well.

Last summer I posted a recipe for Italian Sub Lettuce Wraps with Pepperoncini Aioli, and I’ve been getting requests for more lettuce wraps ever since! So today I thought I’d share my other favorite we came up with last summer – BLAT Chicken Lettuce Wraps with Ranch Mayo.
