This Butternut Risotto is an all vegetable dish, no rice, prepared “risotto style”. Don’t worry we will do traditional risotto another time. We usually enjoy this risotto as a vegetarian dinner with a salad. We have also served it as a side dish, (side note: butternut squash pairs well with steak).
These Mexican Sweet Potato Skins are just so delicious, not to mention pretty healthy as well. There is just a little cheese on top and the rest of dinner is vegetables. When you are eating these, you are not thinking healthy, you’re just thinking cheesy mexican goodness.
You can’t beat coming home on a cold winters’ day and being enveloped by the smell of rosemary and pork. This recipe is really fast and the house smell delicious when something has been braising all day. All the better if there is almost no work involved, especially on those exceptionally long days when you just want to get home and relax.
There is something about the crisp apples, sweet cranberries, and tangy feta cheese that make this salad a favorite of mine. A balsamic dressing doesn’t hurt either. Balsamic Vinegar is probably my favorite vinegar, you just can’t beat that slightly sweet tangy-ness combined with such depth of flavor.
