Limesicle Pudding


Description

This Limesicle Pudding is an addictive combination of coconut and lime together that’s always a crowd pleaser. It’s easily made in the food processor, and there’s no cooking involved. It’s naturally gluten free, dairy free, paleo, vegan and there’s no nuts or eggs making this perfect for most anyone with dietary concerns!


Ingredients

Scale

1 can (13.5 oz) coconut milk, refrigerated

2 Tablespoons lime zest, (about 2 limes)

1/2 cup fresh lime juice, (about 2 limes)

2 avocados, peeled and pitted, (weighing 10oz)

1/2 cup maple syrup, Grade A

1 Teaspoon vanilla extract

2 Tablespoons coconut oil, room temperature


Instructions

Scoop off the cream from the top of the can of refrigerated coconut milk.

Place the coconut cream and the rest of the ingredients in a food processor.

Process until smooth, 3-4 minutes, stopping to scrape down the sides a couple of times.

Refrigerate the pudding for 4 hours or overnight to firm up (you can eat it right away but it tastes better refrigerated).

Serve with Homemade Coconut Whipped Cream and lime slices for a garnish.
