Summertime food at it’s best! This Balsamic Grilled Chicken topped with Caprese Salad is super easy to make and packed with flavor. It’s also a one and done dinner thanks to the added grilled zucchini. Everything is cooked on the grill, so there’s virtually no cleanup and only a few minutes of prep work. It’s popular with both kids and adults, and even better it’s an easy showstopper for entertaining as well.

Strawberry Watermelon Smoothie

Two glasses of Strawberry Watermelon Smoothie on a white background with small cubes of watermelon on top and a strawberry on the side of the glass.

This Strawberry Watermelon Smoothie is my favorite summertime refreshing smoothie! This simple combination never gets old and it’s equally popular with kids or adults. The sweet berry flavor pairs perfectly with the juicy watermelon. It’s frosty cold and a touch of mint makes it even more refreshing as a variation. There’s no bananas involved in this smoothie, just 3 simple ingredients. It’s also gluten free, dairy free, vegan, and paleo as well.

This Creamy Cilantro Chimichurri is an easy to make fresh take on the traditional Argentinian chimichurri. Or you can try my blender method which makes this sauce a touch creamy which is fantastic too!

I first had chimichurri sauce in a Brazilian barbecue restaurant called Bolero in Calgary. If you’ve never had Brazilian barbecue, now’s the time to start! I love how they serve so many perfectly and simply barbecued meats with flavorful chimichurri on the side for dipping.
