I’ve been experimenting with the basic No-Bake Cookies recipe, and we’ve had, (eaten) so many fun results! I made this Pumpkin Spice version for Kimi at the Nourishing Gourmet and you can head over to her website for the recipe. These are the moistest no-bakes I’ve ever made and I have to tell you, they’re so good with coffee (sometimes for breakfast, shhhh)! They have a full pumpkin flavor with a hint of cinnamon and zesty cranberries thrown in the mix.

They’re really moist and have a lot of pumpkin flavor! Texture wise they’re a bit different than usual no-bakes but we love them! 🙂
These no bake cookies would be perfect with a cup of tea. Perfect. And the fact that they are moist and I don’t have to light my oven. (and wash those pans) sounds terrific. Dragging my feet on fall too, get so frustrated when I can’t go outside at much, the wind can be brutal. Ironically, it’s going to be 80 here today in Buffalo, NY, of all places!

I wanna make these! I have some pumpkin in my fridge. Do these dry up or are they sticky?
They’re softer than a usual no-bake and moist, but not sticky. They do take several hours to set up, but they’re worth the wait!
