Carrot Juice

Carrot juice has always been my favorite juice to order out, and it’s super easy to make at home too. You can run the ingredients for this recipe through a juicer, or follow my method for using a blender instead. Bright orange with a hint of ginger, this juice is incredibly refreshing and the perfect way to hydrate.

There’s just something about carrot juice I find extra hydrating. So whenever I’ve been overindulgent, you’ll find me making some fresh carrot juice at home. It’s also my favorite thing to order for a pick-me-up when we’re traveling.

On our last overseas trip to Norway, it took us 4 days of airport ‘fun’ to get there. And you can be the first thing we bought when we landed was all the carrot juice they had left in the little airport shop!

Luckily carrot juice is really easy to make at home as well. So you can enjoy the lovely freshness anytime you’d like (without the $6 airport prices!).

Ingredients & Substitutions

  • Carrots – fresh carrots of any kind are what you’re looking for. Whenever possible, buy them straight from a local farm for the tastiest carrots (and carrot juice) of your life.
  • Apples & oranges – I like to use a mix when I have both on hand, but you can use either apples or oranges. If you’re using a blender, oranges make it easier to blend the mixture smoothly. You can also add freshly squeezed lemon juice for even more Vitamin C and bright fresh flavor.
  • Ginger – is optional and can be left out if you don’t care for it. I like to add just a touch for a little kick and the ginger benefits. The ginger flavor is also really nice in carrot juice.

How to make this recipe step by step

Step 1: If you’re using a juicer, peel the orange and cut the rest of the ingredients into pieces that are the right size for your juicer.

If you’re using a blender as pictured, make sure to cut everything up into relatively small pieces.

Step 2: Add the ingredients to a high-powered blender, starting with the juicy oranges for the easiest blending.

Important Note: I don’t recommend using anything other than a high-powered blender. The carrot mixture is thick and may ‘toast’ a regular blender. My Vitamix makes quick work of this juice, but our old blender barely handle making a smoothie, much less this juice.

Step 3: Add water or the optional orange juice for even more flavor and blend until smooth.

Step 4: Finally pour the purée into a nut milk bag and squeeze the juice from the pulp to strain. You can also press this through a very fine mesh sieve, but the juice will have some texture to it.

Or if you’re using a juicer, simply run the ingredients through the juicer and enjoy the juice right away.

What are the carrot juice benefits?

You can read all about the health benefits on Healthline. Our favorite benefits are the hydrating properties of carrot juice along with the beta carotene and vitamin A that makes my skin glow. It’s also high in Vitamin K. We also love adding a bit of ginger for possible immunity boosting. We enjoy vegetable juices of all kinds for how good they make us feel. This is just our personal experience of course!

Do I need a juicer to make carrot juice?

No, you can make this carrot juice with a blender or a juicer.

Storing leftovers

  • To store – fresh juice is best consumed right away, but you can keep this carrot juice refrigerated in a tightly sealed container for up to 3 days.
  • To freeze – again this juice is best right away, but you can freeze it in an airtight container for up to 3 months.

Tips & Tricks

  • If at any point you feel like your blender is struggling, add more liquid to make it easier to blend!
  • Add 1/4 – 1/2 of a raw beetroot to your juicing blend. Carrot beet juice is tasty too and you get another veggie in.
  • Try adding the juice of 1 lemon to your carrot juice for an even brighter flavor.
  • Try apple & orange or either or, both ways are great with ginger to taste. I also love adding the optional orange juice rather than water if I’m making this in a blender because there’s so much more flavor. Plus you get more nutrients and a boost of Vitamin C.
  • For a lower-sugar version, I use cucumbers in place of the fruit in the summer months. This all-veggie version might not be to your taste, so feel free to add some fruit for sweetness.

Carrot Juice

INGREDIENTS  

  • 1 1/2 pounds of carrots - peeled and trimmed
  • 2 apples - quartered and cored, or 2 oranges
  • 1/2 ounce raw ginger - peeled (1 ounce if you like a small amount of spice)
  • 12 ounces water - or orange juice, omit if using a juicer

INSTRUCTIONS 

  • Cut the carrots and apples into medium sized pieces and layer them in the blender. It’s not necessary to peel the ginger if you have a high powered blender.
  • Add the ginger and water to the blender.
  • Blend until a fairly smooth puree is reached.
  • Filter through cheesecloth or a nut milk bag.
  • Alternatively, you can run the carrots, apples, and ginger through a juicer.

    • It’s usually best to drink fresh juices as soon as you can after they’re made for optimal nutrition, although I do keep them up to 2 days sometimes. But with anything fresh (not pasteurized) always use your best judgement and throw out anything that smells off. I hope you enjoy the recipe, and be sure to let me know how it goes, or if you have anymore questions!

    • It’s a good source of Vitamin A, potassium, antioxidents, and the ginger aids in digestion. I’m not sure what you mean about a gut detox, but I do love having this juice after too many rich meals to help my body recuperate!

  2. I don’t have a juicer and do everything in the blender- spinach, cucumber, kale, apple- any mixture you can think of. I don’t mind the texture and fiber I get with the blender, but I’ve never tried straining it- so thanks for the idea!

    • I usually make smoothies, but I’ve been getting into juicing as well! I tried a green juice version of this recipe recently, and the blended up kale clogged up the straining bag. So far I haven’t been able to make green juice through the straining bag, but I think fine textured cheesecloth might work! Let me know if you try out any green juices and how it goes.
