caramel no bakes made healthier and loaded with chocolate chunks! these cookies are most definitely a crowd pleaser.
start by boiling together the 'caramel' ingredients for 2 minutes. the mixture will be thick and bubbling.
next add the coconut mixture, or rolled oats and mix until the caramel mixture absorbs. then add the chocolate chunks.
portion out the cookies and allow them to cool. this version of the classic takes a few hours to set up, but you can also serve them hot over a bowl of ice cream.
