These Strawberry Banana Nice Cream Breakfast Bowls are essentially an upgrade and super tasty smoothie bowl! The bananas are frozen which creates a creamy nice cream base along with some strawberries and collagen for added protein. The rawnola is a simple topping that’s just a raw granola, but you can also use any granola you love to save time. They’re gluten free, dairy free, paleo, and vegan friendly if you use a vegan protein powder. They’re extra perfect for those days when it’s just too hot to cook!

I often find myself craving something sweet for breakfast, so I’m always working on new recipes to satisfy this craving and still be healthy. Nice cream is always a good place to start because it has the texture of ice cream and satisfies my need for something sweet, but it’s completely made from fruit. And really who doesn’t want ice cream for breakfast, or is that just my particular fascination?

I’ll definitely admit to being a hard core ice cream fan, so getting to eat it for breakfast always seems like a treat. However I don’t know about you, but I definitely do better with some protein in the morning. So to solve this slightest of problems, I decided to add some collagen to my nice cream. (You can also use an vegan protein powder to keep this vegan.)

Adding collagen was just simply to add protein to the mix. But it turned out to be a great idea, because it made the texture even more silky smooth than straight up fruit. From there, I made a quick ‘rawnola’ which is granola that hasn’t been baked. If you haven’t made it before, you’re definitely in for a treat. My version is completely grain free and cinnamony good!

I like to make small batches of rawnola in my mini food processor, but you can use a normal sized one with the small bowl insert as well. Rawnola keeps in the refrigerator for 4-5 days, or frozen for at least a month.

Next up it’s time to assemble all your toppings before you make the nice cream. Nice cream is like soft serve in that it melts super fast, so you want your toppings ready to go. If you don’t have fresh berries on hand, you can make a fruit sauce like the one in my recipe for Fruit and Yogurt Granola Cups.

To freeze bananas for nice cream, I like to slice them into around 1″ slices and freeze them in a single layer. This helps to keep them from clumping, and makes it easier to process into nice cream.

I like to make nice cream in my food processor rather than my blender just to be on the safe side, (as it can be tough on blenders). The only downside so far is it tends to stick in the machine, (pictured above) and you will need to scrape down the sides several times before it becomes nice cream.

You’ll know it’s done when there’s no more pieces of fruit visible, and it’s silky smooth in texture.

Then add the nice cream to your bowls and pile on all the toppings!

And one final tip for presentation, if you happen to have any freeze dried strawberries or raspberries around. Crush a few to sprinkle over the top to add an extra pop of color and flavor.

Ingredients

Units Scale

Grain Free Rawnola:

1 cup big flake coconut, unsweetened

1 cup raw cashews or almonds

1/2 cup hemp seeds

1 Teaspoon ground cinnamon

1 Tablespoon lemon zest

1/4 Teaspoon sea salt

1 Teaspoon vanilla extract

1/4 Teaspoon almond extract

13 Tablespoons maple syrup, to taste

Toppings:

1 banana, thinly sliced

46 strawberries, hulled and thinly sliced

Grain free rawnola, from above recipe

Optional: 1 Tablespoon crushed freeze dried strawberries or raspberries

Strawberry Banana Nice Cream:

4 ripe bananas, peeled, sliced 1″, and frozen, 14 ounces

2 cups frozen strawberries, 8 ounces

1 Teaspoon vanilla extract

1/2 Teaspoon almond extract

2 Tablespoons freshly squeezed lemon juice

3 Tablespoons collagen, or vegan protein powder for vegan


Instructions

To make the rawnola add all the ingredients except the maple syrup to a small food processor or the small bowl insert for a larger food processor.

Process until the desired texture is reached and the mixture is starting to clump. Add the maple syrup to taste, then transfer the rawnola to a sealed container and set it aside.

Prepare all the toppings and set them aside.

To make the Strawberry Banana Nice Cream, add all the ingredients listed except the collagen to a large food processor. Process until it mostly smooth and creamy, stopping at least 4-5 times to scrape down the sides, about 5 minutes.

When it’s starting to look like ice cream, sprinkle the collagen or protein powder in slowly as the machine is running. Scrape down the sides one more time, then process again to make sure the collagen or protein powder is completely incorporated.

Portion the nice cream out into bowls and top with the toppings of your choice.

Notes

We like to eat this as a breakfast for 2, with some rawnola leftover for another day.
