These Sun-dried Tomato Spinach Turkey Burgers are super flavorful and easy to make for weeknight meals. They’re also great for meal prepping healthy lunches for the workweek, (see tips below).

Sun-dried tomatoes really had a ‘moment’ for a while. But then I, like many others, sort of forgot about them while chasing new and fun flavors. However, recently I put together a recipe for Egg Muffins 3 Ways, and I used sun-dried tomatoes in one of them.

This was mostly because when I looked into my fridge, I saw a almost empty jar of sun-dried tomatoes. And I thought, ‘what could I do with these’? This of course sparked a whole new enthusiasm for sun-dried tomatoes again. And so that brings us to today with this recipe that gives new meaning to ‘flavorful’ turkey burgers.

I don’t know about you, but I find ground turkey to be on the bland side. This is especially true if you’re used to using ground pork or beef. But as long as it’s combined with interesting ingredients, it’s a great way to switch things up!

What makes these turkey burgers truly flavorful?

  • Garlic and onion
  • Sun-dried tomatoes
  • Italian seasoning

With just a few ingredients, you’re on your way to an easy, and most definitely flavorful dinner. It’s all about the flavor layering when it comes to ground turkey, in my opinion. Think of it like a blank canvas, and whatever combinations you love can be added to make a great turkey burger!

Let’s make this recipe step by step!

Step 1:

Start by prepping all the ingredients.

A few ingredients are sautéed before you make the burgers!

Step 2:

Next up we’re going to sauté the onions and garlic, then add in the seasonings, sun-dried tomatoes and barely wilt the spinach.

The sautéed ingredients are then mixed into the ground turkey!

Step 3:

Then we’re going to add this ‘flavor’ mixture to the ground turkey, and mix it together.

Step 4:

And the final step is to pan-fry these burgers until they’re golden browned on each side and just done in the center. Then serve them hot, straight out of the skillet with any of the serving suggestions below.

Ideas for how to pack these burgers for meal prep:

  • I like to put these burgers into meal prep containers with the roasted sweet potatoes from my Healthy Meatloaf Meal Prep recipe.
  • For veggies, I love packing these up with the green salad mentioned above, and pack the dressing on the side. Depending on how much activity I’m getting on a given week, I might do just these turkey burgers and the salad. But if I know I’m going to be doing more, I like to add the roasted sweet potatoes.

Sun-dried Tomato Spinach Turkey Burgers

Description

These turkey burgers are incredibly flavorful, easy to make, and have some extra veggies thanks to the spinach!


Ingredients

Scale

2 Tablespoons olive oil

1 clove garlic, minced

1/2 red onion, finely diced, 1 cup

1 Teaspoon Italian seasoning, see notes

1/2 Teaspoon dried onion granules

1/2 cup finely chopped sun-dried tomatoes, drained from the oil they’re packed in

3 cups baby spinach, chopped, 3 ounces

1 Teaspoon sea salt, more or less to your taste

1/2 Teaspoon ground black pepper

1 pound ground turkey


Instructions

Preheat a large 10″ cast iron skillet over medium high heat. When the pan is hot but not smoking, add 1 tablespoon of the olive oil to the pan, along with the garlic and red onion. Cook stirring frequently until the onion is mostly translucent, 3-4 minutes.

Add the Italian seasoning, onion granules, sun-dried tomatoes, and spinach to the pan. Cook stirring constantly until the spinach just wilts, but is bright green, 2-3 minutes.

Remove the spinach mixture from the heat and add it to a medium sized mixing bowl, along with the sea salt, pepper, and ground turkey.

Mix together just to combine, then portion out into 6-8 small patties. (I like to shape smaller burgers because ground turkey falls apart easier than other ground meats.)

Place the same skillet back on the stove and lower the heat to medium. Add the remaining tablespoon of oil to the pan and fry the patties until they’re browned on one side, 5-6 minutes. Turn the patties over and continue to cook until browned on the other side and just done in the middle, 4-5 minutes. 

Serve immediately with your choice of sides.

Notes

Look for Italian seasoning that doesn’t have any added salt or sugar. Also check the label for any ingredients other than herbs, some blends contain dairy.
