Turmeric Chicken Soup

easy to make and loaded with veggies this anti-inflammatory turmeric chicken soup is the perfect kind of cozy meal that's whole30 as well.


step 1

start by mincing the garlic and ginger. Slice the carrots and celery and dice up the onion.


step 2

Sauté the ginger, garlic, carrots, celery, and onion until just beginning to soften before adding the rest of the ingredients.


step 3

add the chicken broth or stock along with the spices and simmer until the veggies are tender. then add the cauliflower rice, thicken if desired and add the spinach.


step 4

stir the spinach and cooked chicken into the soup and allow the residual heat to wilt the spinach. Garnish with toasted cashews/peanuts and cilantro.
