sweet dates stuffed to bursting with a chorizo cream cheese filling and all wrapped up in crisp bacon!

step 1

start by preheating the oven and pitting the dates. Medjool dates work best here because they're larger and the perfect texture.

Next fry up the ground chorizo and combine it with the cream cheese. Stuff the dates and begin to wrap them with bacon.

step 3

finish all the dates wrapping each in bacon, and placing them on a parchment lined baking sheet. These can be made ahead up to this point and refrigerated 2-3 days before baking.

bake until golden browned and bacon is crispy, serve immediately!

3 key tips

1.  Use a good quality baking sheet that won't warp.

2.  Use thin slice bacon, thick slice won't cook fast enough here.

3. make the chorizo cream cheese mixture ahead of time and assemble the dates ahead too!
