Bacon Wrapped Dates

with chorizo cream cheese

sweet medjool dates stuffed to bursting with a chorizo cream cheese (or goat cheese) filling and all wrapped up in crisp bacon!

Start by measuring out the ingredients listed. You'll find all the substitutions and tips on the blog.

Start by pitting the Medjool dates. I use a paring knife to cut a slit lengthwise down the date revealing the pit but not cutting through. Then using your hands, pry the opening of the date apart to remove the pit.

Next, brown the chorizo sausage in a pan breaking it up into the smallest bits possible. Drain the excess grease and mash it together with the softened cream cheese.

Then using a spoon, fill each date equally with the chorizo cheese mixture.

Wrap each date with 1/2 a strip of bacon. Then secure the bacon ends together by inserting a toothpick through the center. Place them on a sheet pan lined with parchment paper or in an oven-proof baking dish and bake for 10 minutes.

After 10 minutes of cooking time, turn each bacon-wrapped date over so they will cook evenly.

bake until golden browned and bacon is crispy, serve immediately!

3 key tips

1.  Use a good-quality baking sheet that won't warp while cooking. Or an oven-proof baking dish.

2.  Use thin slice bacon, thick slice won't cook fast enough here.

3. make the chorizo cream cheese mixture ahead of time and assemble the dates ahead too!
