Start by thoroughly washing the sweet potatoes and trimming away any rotten bits. Poke holes in the sweet potatoes with a sharp pairing knife and place them on a parchment lined baking sheet.

Bake the sweet potatoes until a knife or fork inserts easily into the thickest part of the potato, and they are completely tender about 1 hour.

Split open the baked sweet potatoes and serve with your choice of toppings. We love these with a pat of butter and a sprinkle of sea salt and black pepper. You can also use ghee or olive oil as well.
