the classic caprese salad turned into a full dinner with grilled chicken, pesto dressing, and a balsamic drizzle!

step 1

start by prepping all the ingredients for the salad.  Halve or quarter the cherry tomatoes and halve the mozzarella balls so there's more cheese in each bite.

Next preheat the grill and grill the chicken. This takes about 8-10 minutes per side for chicken breasts.

while the chicken is cooking, blend the pesto dressing and set aside until serving time.

step 4

Serve everything family style, or arrange the salad on a large platter. Slice the chicken and lay it over the top and dot with the dressing. Serve the remaining dressing on the side.
