Chicken Broccoli Soup

start by dicing the onion, and slicing the celery and carrots.

Cut up the broccoli into bite sized florets. You can also use pre-cut up broccoli florets to save some time.

Start the soup by cooking the onions and garlic over medium to medium-high heat in a large soup pot until softened.

Add the seasonings, celery, and carrots, and stir to combine.

Add the chicken stock along with the chicken breasts. Submerge the chicken in the liquid and bring to a boil.

lower the heat to a simmer and cook until the chicken is ready to shred about 20-25 minutes. Remove the chicken from the soup pot and place it on a cutting board to cool.
