classic chicken salad can't be beat, especially in the summer months with sweet juicy grapes and fresh herbs!

step 1

Start by roasting the chicken breasts. Boneless skinless as pictured works, but try and find bone in skin on for even juicier more forgiving chicken. Roasting brings more flavor than the standard poaching method.

While the chicken cooks, mix together the ingredients for the dressing.

Then finely dice the celery, slice the green onions, and cut the grapes in half.

When the chicken is done and cool enough to handle, cut into small bite sized pieces.

add the chicken, green onions, herbs and dressing to a medium sized mixing bowl and combine.

step 6

Season to taste with sea salt and pepper, and stir in the grapes. Let the salad flavors meld in the fridge for 20-30 minutes if you can.
