let's get started by prepping all of the ingredients first. Dice the onion, mince the garlic, chop the sun-dried tomatoes, and measure out the spices.

next sauté the chicken until it's browned on both sides, but not done at this point.

Then we'll sauté the onion before adding the spices and liquids. Next simmer until the sauce has reduced a bit before adding the chicken back to finish cooking.

remove the chicken (to allow for more space) from the pan and wilt the spinach into the sauce, then season to taste and add the chicken back in.
