easy pizza chicken

gluten free | quick | kid friendly


all the flavors of pepperoni pizza piled into this easy kid friendly dish perfect for low carb pizza fridays!


step 1

prep all the ingredients listed, you'll find all my tips and substitutions over on the blog.


step 2

start by cutting the chicken breasts almost in half leaving the edge intact. Open the chicken breasts up and pile in the cheese and pepperoni.


step 3

Add a small spoonful of sauce over the top of the sliced cheese and pepperoni.


step 4

fold the other side of the chicken over the filling and place them in a baking dish. Pour the remaining sauce over the top.


step 5

sprinkle the grated cheese over the top. I love using smoked mozzarella and parmesan.


step 6

bake until the chicken is done and the cheese is bubbling. Sprinkle with basil or parsley and serve.
