berbere chicken curry

ethiopian berbere is a chili based mix of spices you definitely need in your spices to make this addictive berbere chicken curry!

step 1

we're going to start by prepping all of the ingredients. Dice the onion, mince the garlic, roughly chop the spinach and measure out the spice mix.

step 2

sauté the chicken, remove it from the pan, then sauté the onion.

step 3

add the spice mix and coconut milk, simmer until thick and the onions are tender, add the chicken back to the pan.

step 4

when the curry is done, add the spinach and cook 1-2 minutes just to wilt.

step 5

season to taste with sea salt and serve with steamed jasmine or basmati rice.
