Gluten Free Mac and Cheese

quick and easy to make, the gluten-free mac and cheese is made in one pot, creamy, cheesy, and a family favorite. it's better than boxed but just as simple.

prep all the ingredients listed, you'll find all my tips and substitutions over on the blog.

step 2

melt the butter in a large skillet, then add the garlic and cook just briefly over medium heat being careful not to brown the garlic.

Next add the pasta to the garlic butter and stir together.

add the water and some of the heavy cream. Stir to combine and bring the mixture to a boil. Then cover and simmer on low heat.

Stir occasionally until the pasta is almost al dente. Uncover and cook over a brisk simmer to evaporate any extra liquid until it looks like the above photo.

When the liquid is mostly gone and the pasta is just done, and add the cheese. Stir then remove it from the heat. Add cream just until your desired consistency of cheese sauce is reached and season to taste with sea salt and pepper.

serve immediately with your favorite veggies like roasted carrots, broccoli, or asparagus. Or add my apple spinach salad.
