Preheat the oven, then beat the butter, coconut sugar, and peanut butter or nut butter of choice together until completely smooth.

Then beat in the eggs one at a time to thoroughly incorporate before adding the salt and vanilla extract. Be sure to beat well so the mixture is smooth.

Add the oats, then the M&M's and semi-sweet chocolate chips, and mix on low speeds just to combine. You can also use straight chocolate chips.

Portion out the cookies with a cookie scoop, flatten lightly with your hand, and decorate with more candies if desired.

Bake until lightly puffed with crispy edges and a chewy - gooey center. Let cool slightly on the pan, then transfer to cooling racks to completely cool before storing.
