an almond flour shortbread crust piled high with apple pie filling and topped with a crumbly streusel and caramel sauce, these paleo apple pie bars have a vegan option too.
start by preheating the oven and measuring out all the ingredients for the apple pie bars.
Next mix together the crust and streusel topping. This recipe is extra easy because they come together at the same time in 1 bowl!
Scoop out 2/3 of the crust-streusel mixture and pat it into a lined 11"x7" baking dish.
Next mix the apple slices together with the cinnamon mixture. You'll find the best types of apples to use in the recipe.
layer the apple slices over the top of the crust as evenly as possible and pour the extra cinnamon mixture over the top.
top the apple slices with the remaining 1/3 of the crust-streusel mixture and baking until it's golden brown and bubbling with tender apples.
cool completely for the cleanest looking slices and serve with whipped cream or ice cream.

1. use baking apples like Granny Smith, never soft apples like Gala.
2. don't skimp on the caramel sauce, so good!
3. make sure to use fine almond flour. Almond meal is different and very coarse which isn't appealing here!
