Start by cutting off both ends of a fresh pineapple. You can use canned pineapple, but fresh pineapple is way better!

Next cut off the skin by standing the pineapple on its end and cutting just deep enough to remove all the 'eyes'.

Slice the pineapple across into 1/2" slices and remove the cores. I use a small round metal cookie cutter, but an apple corer works too.

next mix the cinnamon together with maple syrup or agave nectar to create a 'glaze'.

Brush the glaze over the pineapple slices and grill over higher heat to sear in grill marks without overcooking the pineapple.
