Let's begin by whisking together the egg yolks and maple syrup until completely combined.

Then whisk in the half and half and heat the ice cream base stirring constantly until slightly thickened, but not boiling.

Strain the finished custard base through a fine mesh sieve and chill thoroughly.

Freeze the chilled custard base in an ice cream machine until thick, creamy and holds up on a spoon.

Serve immediately as a soft serve texture or freeze until firmer.
