ahead egg muffins

perfect for healthy breakfasts and great for meal prepping ahead too, these egg muffins are loaded with flavor and veggies!

step 1

start by preheating the oven and chopping up the onions.

cook the sausage and onion together until just done. Then grate the zucchini and chop the tomatoes.

step 3

whisk together the egg mixture, then stir in the sausage, grated zucchini and tomatoes.

step 4

bake until puffed and just done in the middle. Serve immediately or cool to room temperature for 20 minutes before refrigerating.

If you're making these for meal prep, cool a bit before removing them from the muffin tin and placing them into a container to refrigerate.
