Peanut Butter Granola Bars

Start by toasting the oats until they’re golden brown. Then set them aside to cool on a wire rack. Don't skip this step, it adds incredible depth of flavor.

Meanwhile melt the honey in a large pot/pan and add the peanut butter, avocado oil, and vanilla extract stirring to completely combine. You want the mixture to be hot, but you don’t need to boil it like no bake cookies.

Add the oats when they’re room temperature or barely warm to the peanut butter mixture.

Mix completely then pat the peanut butter oat mixture firmly into a parchment lined half sized baking sheet.

chill to set up and cut into rectangular bars. Store right away at room temperature or freeze.

or drizzle the granola bars with melted chocolate if desired and sprinkle with sea sal.
