tuscan sausage pasta

Start by measuring out all the ingredients. You'll find extra options including how to make this dairy free as well in the recipe.

Next dice the onion, mince the garlic, chop the sun-dried tomatoes, and roughly chop the spinach.

Sauté the sausage until just done and browned before removing it from the pan to make the sauce.

Then sauté the onion and garlic together over medium heat until golden brown.

Then add the Italian seasoning, cook for a few seconds, then add the sun-dried tomatoes and white wine. (other options are in the recipe)

Once the white wine is mostly evaporated, add the heavy cream and simmer until slightly thickened while you boil your choice of pasta. Then add the chopped spinach and cook until just wilted.

Then add the sausage back to the pan and bring the sauce back to a simmer.

Finally add the cooked pasta to the sauce and simmer while stirring so the sauce adheres to the pasta. season to taste with sea salt and pepper and serve with parmesan.

3 key tips

1. Cook the pasta in salted water, it adds a lot of flavor to the final dish.

2. You can use chicken broth with a hint of lemon juice in place of the white wine.

3. Try all different shapes of pasta from fettuccine to penne!
