1cuppeanut butterunsweetened, see notes, I used a natural brand
3/4cupcoconut sugarThe original recipe calls for 1 cup, but we find 3/4 cup to be plenty sweet
1egg
1/4teaspoonsea saltuse only if your peanut butter doesn't contain salt
Instructions
Preheat the oven to 350F.
Place all ingredients in a medium sized bowl, and mix until combined.
Portion out the cookie dough with a cookie scoop (#40) onto parchment lined baking sheets.
Lightly flatten each cookie dough ball with the back of a fork to create criss-cross marks on the tops of the cookies.
Bake for about 10 minutes. The cookies are done when they start to turn golden brown, but are still soft in the middle.
Let the cookies cool for a few minutes on the baking sheet until they are firm enough to move to a wire rack to cool completely.

Notes
Your cookies will be less crumbly if you use a no stir peanut butter and regular cane sugar. If you're using natural peanut butter, be sure to stir it well to make sure the oil is combined. Also you'll need to add 1/4 tsp of salt or to taste since natural peanut butter doesn't have any salt.
