easy | garlic-herb | holiday

simple, easy to make and a complete crowd pleaser, this beef tenderloin is stunning and an impressive holiday or celebratory main dish!

step 1

Start by measuring out and prepping the ingredients listed. you'll find more tips and substitutions on the blog. There's several options for dairy free as well.

step 2

Next mash together the softened butter or dairy free option together with the garlic and minced fresh herbs. Set aside while you get the beef tenderloin ready.

step 3

Prep the beef tenderloin roast by tucking the thin end under and cutting it into 2 equal pieces. You will find a video on the blog for how to cut and tie the roast yourself.

step 4

Next tie the roast (refer to the video on the blog) or have the butcher do it for you. Season to taste well with sea salt and pepper.

step 5

Then sear the roast in a cast iron pan until well browned on each side.

step 6

Spread the garlic herb butter over the top of the roast, this will create the garlic herb crust as it roasts in the oven.

step 7

Roast until an instant read thermometer comes to your desired doneness. Let the roast stand covered for 10 minutes before removing the kitchen twine and slicing.

step 8

Serve the roast beef tenderloin immediately with your choice of side dishes. You'll find everything you need plus desserts on the blog.

You'll also find my recipe for Rosemary mushroom cream sauce which is incredible with this and it's our family Christmas tradition.

3 key tips

1. Use a instant read thermometer to make sure your roast is perfect.

2. Definitely use fresh herbs, no time for dried herbs with such a treat.

3. Serve with your favorite sauce, we love serving this with my Mushroom cream sauce.
