next dice the onion and mince the garlic, use a garlic press to speed up the prep. Then clean the fresh herbs or measure out the dried options.

Cut the carrots and potatoes into evenly sized pieces, then set them aside while you prep the pork roast.

Sear the roast on both sides in a large cast iron pan until well browned on each side. Use a pair of sturdy tongs to turn the roast.

Remove the roast from the pan and place it in the slow cooker bowl. Next sauté the onion and garlic in the same cast iron pan before adding some broth to loosen up the tasty browned bits on the bottom.

Pour the onion garlic mixture over the top of the pork roast in the slow cooker bowl.

Add the fresh herb spring together in a bunch and top the roast with the potatoes and carrots. Pour the remaining broth over the top and set the timer to cook.
