Garlic Butter Mushrooms

Start by measuring out the ingredients listed. You'll find all the substitutions on the blog, along with tips and lots of ideas.

remove the woody stems of the rosemary or thyme, then chop the fresh herb until minced. Set it aside.

clean the mushrooms, them slice them into 1/4" slices.

Heat a large skillet until hot but not smoking, add the butter, garlic, and rosemary and sauté just until fragrant, about 30 seconds.

add the mushrooms to the pan and sauté stirring only as the mushrooms brown. Make sure no liquid accumulates as you cook.

when the mushrooms are almost done, season to taste with sea salt and cook just until tender.

3 key tips

1. keep the heat high enough to sauté without liquid in the pan.

2. no extra liquid while cooking means you'll never have rubbery mushrooms.

3. don't salt until the end of the cooking time so the mushrooms don't lose too much water as they cook.
