simple to make and elegant enough for entertaining or date nights, this garlic butter shrimp pasta is all flavor with dairy free options!

Start by measuring out the ingredients listed. You'll find all my tips and substitutions over on the blog. Bring a large pot of water to a boil.

next mince the garlic, zest the lemon, chop the parsley and spinach.

While the pasta cooks, melt the butter in a large skillet, then add the garlic cooking until fragrant but not browned.

When the pasta is al dente, reserve some cooking water and drain the pasta.

When the pasta is almost done, add the shrimp to the garlic butter mixture and cook until almost done.

season to taste with sea salt and pepper along with the fresh lemon juice and just enough pasta cooking water to coat the pasta.

Serve immediately with your favorite veggie side dishes, I love asparagus, or my sautéed green beans with a touch of garlic.
