Chicken wild rice soup

easy comfort food, this chicken and wild rice soup is easily made in the instant pot but works perfectly on the stove top as well.

step 1

start by prepping the ingredients, then sauté the onion, carrots, and celery  in the instant pot.

step 2

next add the chicken and briefly sauté. No need to cook the chicken all the way, the instant pot will finish it during the pressure cook time.

step 3

next stir in the spices, then add the cubed sweet potatoes and wild rice.

step 4

add the broth then set the instant pot to pressure cook. Use this time to cleanup or make any side dishes!

When the instant pot is done, quick release then season the soup to taste with sea salt and pepper before serving.

1.  cut the sweet potatoes into large chunks so they don't fall apart.

2.  use a good quality stock or broth for the best flavor.

3. serve with something crispy like biscuits or crackers for a comfort food combo.
