Lemon Chicken & Asparagus

a super simple sheet pan meal made in just minutes, this Lemon Chicken and Asparagus is sure to be a hit with the whole family!


step 1

Start by measuring out the ingredients listed. You'll find all the substitutions on the blog, along with tips.

Preheat the oven, then mix together all the ingredients for the lemon herb sauce in a small bowl.

The snap off the tough ends of the asparagus where the spears naturally break, or peel away the tough outer layer.

Place the chicken breasts on a cookie sheet and drizzle with about 2/3 of the sauce, then roast until almost done before adding the asparagus.

When the chicken is almost done, add the asparagus to the pan and drizzle with the remaining sauce, then top with the sliced lemon. Broil just until browned and done.

When the chicken is done, and the asparagus is just tender, serve immediately as is or add your favorite side dish like mashed cauliflower or mashed potatoes.

1. Try using broccoli or broccolini when asparagus isn't in season.

2. Use chicken thighs and adjust the cooking time.
