mango Chicken Curry

Sweet and savory come together for an unbeatable combination in this crowd pleasing curry!

step 1

let's begin by dicing up the mango and prepping all of the other ingredients. Check out my post for tips for fresh and frozen mango.

Next we'll blend the coconut milk together with part of the mango for the tastiest sauce!

step 3

sauté the chicken, set aside, then sauté the onion and add the Indian spices or the Thai curry paste.

step 4

Simmer the veggies with the sauce until tender, stirring occasionally to prevent sticking.

step 5

add the spinach, allow to wilt a bit, then mix in before adding the chicken back to the pan.

step 6

season to taste with fish sauce and lime juice, then stir in the mango chunks.
