Mashed Sweet Potatoes

Next thoroughly wash the sweet potatoes, peel them, then trim away  any bad spots.

Cut the sweet potatoes into chunks about 1″x1″ trying to keep them as even as possible so that they cook evenly.

Melt the butter in a large pot, then add the cream. You can add the sea salt and pepper now, or season to taste later.

Add the cubed sweet potatoes. Cover the pot and bring to a simmer. Stir occasionally and simmer until the sweet potatoes are tender.

When the sweet potatoes are tender mash them by hand, electric mixer, or food processor for the smoothest results.
