Chocolate Covered Pomegranate Acai Bowls | Get Inspired Everyday!

For me, a sense of indulgence the key to healthy eating. Whenever I feel the least bit deprived or restricted, my mind goes into a state of constant want, and pretty soon it’s bring on all the chocolate and cheese please (with no sense of moderation)!

But… what if we could eat healthy and love it? Well that’s a question I’ve been working on answering for years, with some good results too if you don’t mind me saying. You see, my mind usually works something like this ‘I don’t really want to eat broccoli unless it’s smothered in cheese sauce and browned butter toasted breadcrumbs’. Next it goes something like this, ‘why even bother with the broccoli, let’s just put the cheese sauce and toasted breadcrumbs over pasta?’ – you get the idea, if my brain was in charge it would be all fat and carbohydrates.

However, I’ve discovered there’s an entire universe of amazing (and healthy) foods out there that I actually love, which means absolutely no sense of deprivation. I figure it’s always a win if you can eat chocolate for breakfast and feel good about it!

This recipe comes together in just minutes if you already have your granola made. Simply blend together the acai packet with bananas, and cocoa powder to make a thick chocolatey base. Then pour the base into bowls before topping it with Greek or coconut yogurt, granola, and pomegranate arils.

I really like to use my Chocolate Almond Granola in this recipe because it enhances the overall chocolate experience.

I’d even go so far as to say this would work for dessert sometimes with the rich chocolate-acai base, topped with creamy yogurt, Chocolate Almond Granola, and sweet crunchy pomegranates!

Chocolate Covered Pomegranate Acai Bowls

Ingredients

Chocolate Acai Base:

  • 2 ripe bananas, peeled
  • 2 Tablespoons cocoa powder, I use Dagoba
  • 1 Tablespoon vanilla extract
  • 1 pkg frozen acai purée, 3.5 ounce, 100 grams

Toppings:

  • 1/2 cup Chocolate Almond Granola
  • 1/2 cup pomegranate arils
  • 1/2 cup Greek yogurt, or coconut yogurt for the dairy free option

Instructions

  1. Put all the ingredients for the chocolate acai base into a blender, breaking up the acai packet into 3-4 pieces as you put it in the blender. Blend starting on low and working up to a medium speed until the mixture is smooth and thick. You may need to use the tamper to keep the mixture moving in the blender.
  2. Pour the chocolate acai base into two breakfast bowls, and divide the toppings evenly between the two bowls.
  3. Serve immediately!

  1. MADE IT!! AND LOVED IT!! Seriously I’ve been eating it for breakfast (and a desserts after lunch) like every day since I made it… I really need to calm down and eat something else but it’s just that easy to make and just that good! Love the texture–kinda like a pudding–which makes it great for mixing up whatever toppings you like. I did pomegranate kernels and homemade cultured cream. Great recipe–Thanks Kari!!     • I’m so glad you were able to locate some acai purée and try this out! I have the exact same problem branching out from acai bowls, once you get on a roll, it’s hard to eat anything else!

  2. I can totally relate to the skip-the-broccoli-bring-on-the-cheese temptation. When you’re looking to have an enjoyable culinary experience, it’s easy to substitute the veggies for carbs and/or cheese. BUT I do love discovering secretly healthful meals like acai bowls…soooo simple, so tasty, and so nourishing! I’ll have to give your recipe a go asap!

  3. Wow, this bowls definitely look like they’d satisfy my never ending want for chocolate. And yes, cheese and chocolate, if you deprive yourself too much, you just go insane, at least I know I do!! Maybe that’s why they created Spanx?

  4. This looks so good! I love my normal acai bowls but this would be great to change it up every now and then – and who doesn’t love the idea of chocolate for breakfast?
