One of the greatest things about homemade Chipotle burrito bowls is that you can pile on as much guacamole as you’d like. These bowls are also way more flavorful than the restaurant version, and they’ll quickly become a family favorite. You’ll find meal-prepping tips, super-fast shortcut options, and dietary suggestions as well. Burrito bowls are a great family meal or entertaining idea because they’re easily customizable for anyone who is gluten-free or dairy-free.

Burrito bowls are a weeknight favorite in our house because you can meal prep quite a bit ahead and reheat on busy nights. But we also love burrito bowls for entertaining because everyone can build their bowls to their liking.

Ingredients & Substitutions

  • Chipotle Honey Chickenis a copycat recipe for the brand new Chipotle Honey Chicken menu item.
  • Cilantro Lime Ricemade with the same ingredients as Chipotle, but has so much flavor.
  • Fajita Veggieswe make our fajita veggies with red, orange, or yellow peppers because that’s what we prefer, but you can also use green peppers like Chipotle.
  • Pico de Galloor fresh tomato salsa is what Chipotle serves with their burrito bowls, but you can also use my Fire Roasted Salsa or fruit salsas listed below in ways to serve this.
  • Guacamoleis also standard in burrito bowls, but we sometimes just add diced avocado as a shortcut.
  • Corn Salsa – is also listed as part of Chipotle Honey Chicken Burrrito Bowls, but you can use just corn or omit it altogether. There’s a quick recipe for it in the recipe card until I get the recipe published.
  • Toppings – we add black beans, chopped romaine lettuce, grated cheese, and sour cream.

How to make this recipe step by step

Step 1: Start by preparing all the components listed in the recipe.

Next build the ‘base’ of your burrito bowl with Cilantro Lime Rice and shredded lettuce.

What is the flavor of Chipotle Honey Chicken?

The brand new Chipotle Honey Chicken is a mix of sweet and spicy with plenty of savory flavor from the Mexican spices like cumin and oregano. The smoky chipotle chili flavor is perfect paired with honey for burrito bowls, quesadillas, tacos, salads, and more.

Storing leftovers

  • To store – store every component of the burrito bowl separately in containers in the fridge for up to 1 week for the veggies, cheese, and corn salsa. The chicken, beans, and rice will keep up to 4 days, and the guacamole is best made fresh.
  • Make ahead – almost everything can be made ahead and reheated, except the guacamole, which is best made fresh, or 1 day in advance at the most.
  • Reheating – add a little bit of each thing you want in your burrito bowl to a non-stick pan with 1-2 tbsp of water. Cover and reheat over medium until the water has evaporated and the burrito bowl is heated up, or you can microwave.
  • To freeze – the chicken freezes really well, but the beans and veggies will change texture a bit when thawed. The rest of the burrito bowl ingredients don’t freeze well.

Tips & Tricks

  • Simplest burrito bowls: use store-bought salsa, pre-grated cheese, and make my Instant Pot White Rice. You can also use diced tomatoes instead of the salsa, and diced avocado in place of the guacamole. Serve everything with chopped fresh cilantro and lime wedges for squeezing over the top. This gives you similar flavors with a fraction of the prep time!
  • When tomatoes aren’t in season, make my Fire Roasted Salsa, which uses canned tomatoes, or my Grilled Pineapple Salsa, which keeps well in the fridge for a week.
  • Pepperjack cheese is our favorite to add to burrito bowls because it adds so much flavor without adding much spice.

Dietary Options & Substitutions

  • Dairy-free – use your favorite dairy-free cheese and sour cream. Or omit the dairy and use my Cilantro Lime Dressing for a flavorful, lightly creamy sauce. This is our personal favorite dairy-free option for Mexican-inspired meals.
  • Paleo – omit the dairy and corn salsa and use my Cilantro Lime Dressing. Instead of the rice and beans, use my Roasted Sweet Potatoes instead.

Quick version of Chipotle’s Chili Corn Salsa: 2 cups thawed frozen corn (10 oz), 1/4 cup minced red onion, 2 tbsp minced jalapeno, 1/4 cup chopped cilantro, 2 tbsp lime juice, 1/2 tsp sea salt, 1 tsp agave nectar.
Chipotle’s Secret Sauce: mix sour cream together with Chipotle Honey Vinaigrette in equal parts or to taste to drizzle over your burrito bowls.
