May is a fun month with both Cinco de Mayo and Mother’s Day to celebrate. It’s probably no surprise that we celebrate pretty much every holiday with yummy food, so I wanted to share some recipe inspiration with you too.

You’ll also find lots of easy dinners that feature plenty of fresh fruits and veggies. It’s always so nice to enjoy all the fresh produce coming into the summer months. The first locally grown greens start showing up, along with asparagus and berries too, (for some anyways!).

But if you’re like us and waiting for berries until June sometime, there are some recipes below that make good use of frozen berries too. The concept of ‘seasonal’ definitely varies for all of us depending on where you live. And we’re far enough north that berry season starts at the end of June when so many of you are already moving onto to tomatoes and corn!

With that in mind, I’ve put together 31 recipes for inspiration for everyone. And if you have lots of chilly days ahead of you too, rest assured there are some cozy recipes below too. I always love making my Easy Thai Green Curry this time of year on cold rainy days because it’s full of spring veggies but still cozy and comforting. So I hope you’ll find some delicious recipes below that work with your climate!

Let’s kick off these 31 Recipes to Make for May with some fresh, easy dinners

Also, I hope you’ll enjoy some of these cozier recipes for those cold late spring/early summer days. Maybe it’s toasty warm where you are, but we just had 3″ of snow not too long ago! And so we often make these recipes that have lots of fresh flavor but are still comforting on chillier days.
